Cedar Plank Grilled Venison

Ingredients:

Grilling/steak spice Italian herb seasoning paste Olive oil Habinero sauce (to taste) Minced shallots

Combine marinade ingredients in a bowl and mix well.  Cover the roast in the marinade.  Refrigerate for 1 hour.  When marinade process is complete remove roast and cover in a thick layer of coarsely ground fresh pepper (mixed peppercorns are best).

Grilling

Preheat grill to 550, and sear roast on all sides to lock in flavors (1-2mins per side). Place grilled venison roast on cedar plank and reduce heat to minimum setting.

Use a meat thermometer to grill by temperature – 145 degrees for medium rare.

After 10 minutes on minimum heat, cook the roast indirectly by turning all but one burner off.  Move the cedar plank and roast to the side of the grill with no burner. Cook slowly letting internal temp rise to desired temperature.

When roast reaches 120 degrees, finish on minimum heat to release smoky flavors from the cedar. Slice, serve, and enjoy!
